In my house, we use the term “happy food” to describe which meals/items give us that joy or make us do a dance! Food has this incredible impact on all of us and I think good food or “happy food” not only nourishes us physically, but emotionally too.
I ABSOLUTELY LOVE French Fries! They are definitely on my list of “happy food”! I think more than sweets, I love almost anything fried! There’s nothing quite like freshly fried potatoes. I personally love very thin cut fries and I not only put salt on my fries, but pepper too! Yes! I like spicy and spiced fries!
Obviously, too much fried food isn’t a good thing and somehow, the air fryers of the world just never have that same texture as a deep fried potato.
Well, to my happy surprise, there is a way to get crispy fries without too much oil. YES- that’s right! We CAN have our cake and eat it too! I was ecstatic to find out this method and hope you too can now enjoy fries without the guilt!
The trick is to wash and cut the potatoes and to soak them overnight in cold water in the fridge. After that, it takes about 45 minutes to an hour in the oven at 220 degrees Celsius. But then, you will absolutely get crispy delicious fries!
This particular recipe has an Indian twist to it. I like adding different spices/masalas to my fries especially the mango powder. I hope you will too!

INGREDIENTS:
- 4 large potatoes (or more!) peeled and sliced thinly
- 2 Tbsp oil
- a few curry leaves (curry patha)
- 1/2 tsp red chillies (laal mirch)
- 1 tsp mango powder (amchur/khat)
- 1/2 tsp garam masala
- 1/2 tbsp salt (or to taste)
STEPS:
Step 1: Peel and wash the potatoes. Slice into thin pieces.
Step 2: Soak potatoes in water overnight in the fridge (at least 8 hours)

Step 3: (next day): pat the potatoes dry with a clean paper towel

Step 4: In a bowl, mix the potatoes, oil, salt, red chillies, mango powder (amchur/khat), garam masala, & curry leaves (curry patha).

Step 5: Mix all the ingredients well and place on a baking sheet on parchment paper


Step 6: Bake for 45 min to an hour at 220 degrees Celsius
